Grain-Free Pizza Recipe

We’ve been having a lot of those days lately. So much going on, never enough time. It’s an hour before the kids bedtime – which is 7 in our house – and I still need to do dinner. Sometimes, we get to a point where we will just give the kids a healthy but fast’n’easy “kid food” dinner for the sake of getting them to bed on time. Usually a protein, a veggie, and a fruit. Then, The Daddy and I will wait until after their bedtime and make ourselves something.

I’m not saying it’s a good habit, but we do it occasionally.

The Daddy turned on a show he’s been watching on Hulu, and it’s not something I’m super interested in so I headed to the kitchen to come up with something.

I’m trying to do this sort of hybrid paleo+keto thing right now. Mainly, because I can’t have gluten anyway (celiac), and grain-free makes me feel even better. Plus, right now I’m mostly dairy free while I’m nursing. Yup, another dairy allergy in the house – baby Mars. I honestly enjoy eating healthy, but I do miss dairy.

My husband on the other hand LOVES pizza. He would probably be fine having it for at least one meal a day, every day. I’m pretty neutral, but I enjoy it on occasion. I just get frustrated that most of the time it’s twice the price, half the size, and the crust leaves something to be desired. 

Also, several pizza places around us offer gluten free, but not grain free. So I decided to cook up my own from scratch pizza.

Of course I turned to Pinterest for “[P]inspiration”

I looked at several grain free recipes and did what I usually do. I tend to get the general idea of a few recipes and pick and choose what I like or have on hand and just go for it (another reason I’m not a baker, I don’t like following a recipe exactly)

When I was doing my AIP Paleo diet, I got some cassava flour. Cassava has many names – manioc or mandioca, yucca, and tapioca. It doesn’t count as keto though, FYI. It’s very starchy and has about as many carbs as regular flour. But I like the taste for more savory things, and it is paleo.

Guess what?

The Daddy actually liked it! He’s usually not a huge fan of a lot of my grain free versions of things. Spaghetti squash? Nope. The kids will gobble it up and ask for more, but for him I think it’s mostly a texture thing.

My Grain-Free 20 Minute Pizza For Two Recipe

Grain-Free Pizza

Here’s what you’ll need:

  • 1 cup Cassava flour – I like Otto’s
  • 1/2 tsp Himalayan pink salt
  • 1 tsp Garlic powder
  • 1 tsp Italian herb(s) of choice
    • [oregano, basil, rosemary, thyme]
  • 1/3 cup Liquid oil (olive, coconut, whatever you prefer)
  • 1/3 cup Warm/hot water
  • 1 Egg

Here’s how to make it:

Set your oven for 450° [I recommend having your baking pan or pizza stone in the oven while you’re making your dough. I used the pizza stone I scored at a thrift store for 75 cents]

First, mix your dry ingredients: cassava flour, salt, garlic powder, & seasoning. I used my Ninja food processor with the dough mixer. You can totally use a large bowl and a spoon – I just really like my Ninja.

Next, add your warm/hot water and oil and mix. You’re not gonna want your water too hot if you’re using a plastic material like a food processor. For this pizza I used half olive oil and half MCT oil (great for the ketogenic diet). I use several kinds of oils interchangeably in all of my cooking.

At this point the dough should be warm, not hot and still pretty crumbly.

Now, you’re gonna add your egg into the mix and stir or run the mixer. I let my mixer run until it was rolling around a big ball of dough. If it still feels sticky to you, add small amounts of flour until it is firm enough to roll into a crust. Stick with cassava or use another grain free flour like coconut or almond.

Next, form your crust. You can use your hands, a roller or both. I rolled it out on my silicone baking mat and got it looking nice and round. You can use parchment paper or just roll it directly onto your stone or baking sheet. It’s really up to you how thick you want to make it. I got my pizza stone out of the oven and quickly flopped the dough from the baking mat to the stone – it held together well.

Time for the oven! Let it cook for about 10 minutes. It might have a few bubbles, but they should deflate. Just make sure it’s starting to get a little brown. After 10 minutes it should be firm enough to gently flip it over and cook it on the other side for 2-3 minutes. Use an oven mitt, don’t burn yourself! If your dough bubbled, just press lightly to deflate it yourself before putting it back in the oven.

After a couple minutes, you can take it out again and add your toppings! I added sauce, lots of bacon, and – since this one was just for me and The Daddy – I used regular mozzarella cheese. I don’t eat much dairy while I’m nursing, so it was a treat. You can make it dairy-free by using a non-dairy “cheese” such as Daiya brand, or just none at all.

I will definitely be making this again for me and the kids and experimenting with some dairy-free cheese and veggies.
